Maximize Your Flavor Per Calorie to Lose the Most Weight

Culinary Intelligence tells the story of one New York magazine food writer who dropped 40 pounds and still managed to live life to the fullest.

In the mid-1990s, Peter Kaminsky, a self-proclaimed hedonist, landed the perfect gig. As the writer behind New York magazine's "Underground Gourmet" column, he was paid to patrol the outer reaches of the boroughs in search of the tastiest ethnic fare. When he wasn't sampling Vietnamese, Korean, Greek, Cuban, or West Indian cuisine, his duty was to discover little-known, up-and-coming restaurants. And as the magazine's go-to food writer, Kaminsky was also called upon whenever the likes of Daniel Boulud, Alain Ducasse, or Thomas Keller opened a new bastion of four-star-fare. Some of New York's greatest chefs hired him as a co-writer (and taster-in-chief) for their cookbooks.

There was one occupational hazard. When Kaminsky, who is five foot-nine, became the Underground Gourmet, he weighed 172 pounds and wore trousers with 34-inch waistbands. After a few years on the job, he had crossed the 200-pound line and struggled to wiggle into XL T-shorts and 38-inch pants. The wake-up call came when his life insurance renewal was denied. "The choice was clear," he writes. "Mend my munching or fast-forward to Judgment Day."

And mend he did, shedding 40 pounds, getting his blood sugar levels under control, and regaining his insurance policy. Culinary Intelligence is the story of how he accomplished what many dieticians say is impossible: losing weight and keeping it off.

"Intelligence" is the operative word. Kaminsky tells his story with engaging, thoughtful prose--no gimmicky diets, no impossible-to-follow menu plans. He believes in gratification, not denial. "For a change in diet to succeed, it must be at least as satisfying as the unheathful fast food and processed ingredients that it replaces," he writes. In fact, one of the reasons he decided to lose weight was so that he could look forward to many more years of drinking great wines and eating juicy steaks.

The guiding principle to eating intelligently (and with full pleasure) according to Kaminsky is by maximizing what he calls Flavor per Calorie, or FPC. FPC simply means consuming the very best food and drink you can get. Beer, which Kaminsky still enjoys, provides a good example of FPC in action. Guzzling a Coors fails to quench that beer-y thirst, so you pop another can. On the other hand, a full-bodied, hoppy, yeasty craft brew invites you to sip and savor its complexity. One bottle leaves you satisfied, and packs no more calories than a bland, industrial brew. The intense flavor of fresh seasonal fruits and vegetables satisfies; there's no need for high-calorie sauces and sweeteners to breathe life into out-of-season produce. A modest portion of grass-fed beef delivers more satisfaction than the dreary meat from industrial feedlots. And -- critically -- cooking those ingredients well (or living with someone who does) maximizes FPC.

Although there are few outright taboos in Culinary Intelligence, Kaminsky does point out areas where those trying to shed pounds go at their peril. If you want to lose weight, Kaminsky has three words of advice: "No white stuff," meaning white flour, white sugar, white rice, and potatoes. He suggests you avoid desserts and sweetened beverages. All forms of processed food are antithetical to FPC. And he suggests you examine your diet for high value targets to eliminate. In Kaminsky's case, it was pizza. As a pizza-loving writer working from home in Brooklyn -- a pizza paradise -- he was in the habit of nipping out at midday and heading to one of the many good parlors in his neighborhood. A little calculation showed that his pizza habit added the equivalent of two extra days' worth of calories to his weekly diet -- he was eating nine days' worth of food every seven. Daily sojourns to the pizza parlor became a thing of the past, although he occasionally picks up a slice as a special treat.

Liquor can be part of intelligent eating -- in moderation. Kaminsky urges readers to set limits and stick to them. After some introspection, Kaminsky decided that he could survive on one glass of wine with dinner, where his earlier self might have enjoyed three or four. One glass forced him to savor every precious drop and increased the satisfaction he got from wine.

Lose Big participants continue fight to drop weight

ROANOKE COUNTY, VA --

In 10 On Your Side Health Team -an update on the local spin-off to NBC's "The Biggest Loser.

As we've reported The Green Ridge Rec Center in Roanoke County is sponsoring the "Lose Big" program.

Katie Cordani is getting better and better at the exercises her trainer has planned for each work out.

She's on her feet, her back, and even her hands fighting to drop weight.

The mother of three says, she's winning the battle.

"I went out and bought smaller clothes this weekend. I was so excited, I was expecting to buy larges and I was putting on mediums and they were comfortable and they were actually kind of loose and was like this is so cool, I was so excited. I texted my mom as I was in the dressing room," Cordani said.

Katie had that priceless moment in the dressing room thanks to a lot of sweat at the gym.

Her trainer, Chelsea Arner, says she's working Katie harder and she's complaining a lot less.

"A lot of times half way through most people will drop off start not to come as often, but Katie has stepped it up even more so she's really doing great and still losing weight," said Arner.

Jenna Fischer: It's "Unnatural" How Fast Hollywood Moms Drop Baby Weight

Since giving birth to baby Weston last September, Jenna Fischer says she's got way more important things to worry about than when she'll lose her baby weight.

"I think it's unnatural," the Office star, 38, told Celebuzz during a recent interview about the rush most new celebrity moms are in to slim down.

Explained Fischer, "There's so much pressure on you as a new mom that the last thing you need to have hanging over your head is some expectation of what your body is supposed to look like."

Stressing that new mothers should get a "free pass," the actress added that she's "actually angered by the 'posing in a bikini six weeks after having my baby' [trend]."

"Who cares if our boobs are hanging low and we have a little more junk in the trunk?" Fischer continued. "We created a human being, everybody. Let's celebrate!"

At the Screen Actors Guild Awards in January, the actress--wed to screenwriter Lee Kirk--told Us Weekly she doesn't buy into the popular "I'm just breastfeeding" defense some A-list moms give when talking about shedding pregnancy weight gain.

"Let me please stand in solidarity with all of the women who are not a size 2 six weeks after leaving the hospital," she told Us. "I am breastfeeding my baby and I am not getting any skinnier!"

Do you Have Carborexia?

Cut back on carbs to lose a few pounds, by all means, but if you start to view white sliced as the devil incarnate and shudder at the mere sight of spuds, you could be suffering from carborexia which can affect your happiness as well as your health, says Charlotte Methven

My name is Charlotte and I am a recovering carborexic. For many months, I balked at the sight of a bread basket and couldnt so much as eat a piece of sushi without imagining that the little blob of sticky rice was somehow going to give me a muffin top. And I was not alone Say the word carbohydrate to a group of women and youll induce a collective shudder.

Not so long ago, to lose weight you simply ate less food. But a steady wave of trendy diets over the past few decades, from Atkins (founded in the 1970s and rediscovered in the mid-noughties) and South Beach, to the current favourite Dukan, have managed to convince us that the secret to a slim figure lies not in mere moderation, as good sense would dictate, but in adopting a low-carb diet. Where once calories were ruthlessly counted and controlled, now its potatoes, cereals, pasta, rice and bread foods that were once staples but have now been invested with evil powers and unceremoniously ejected from our diets.

Google carborexia and you will be directed to endless web pages devoted to a condition gripping eco-obsessives hellbent on reducing their carbon footprint. But the term has now also been adopted by the equally fanatical anti-carbohydrate brigade. We are fast becoming a generation of pasta-shunning carborexics.

On-trend sandwich chain Prt--Manger responded to the demand for low-carb fast food by introducing its No Bread Crayfish & Avocado sandwich in other words, a salad (and now a bestseller) and Waitrose followed suit when it launched a 125-calorie Lettuce Boat, a sandwich using lettuce instead of bread.

I am not proud to admit that I succumbed to this madness when my marriage broke up last year. I was so consumed by anxiety that I was unable to eat much at all, and my weight dropped to just over seven stone. Though I had never set out to lose weight, the feeling of being waifish was intoxicating. Because I was going through a hard time emotionally, looking fragile reflected how I felt. I didnt want to let it go. At a time when life felt uncertain, my carbohydrate intake was something that I could control.

And it felt great, most of the time. I adored never having that full feeling after a meal, and because I was still eating protein and vegetables, I usually had enough energy. Very occasionally I would feel slightly light-headed in the afternoon, and in a to-hell-with-it moment attack the biscuit jar (and afterwards feel very guilty). However, I have no doubt that had I carried on with a super low-carb diet long term, I would have started to feel less and less well. And psychologically it never did feel right. Once paranoia about eating these foods becomes a habit, it is a hard one to shake. Whenever I was forced usually out of good manners at someone elses home to eat carbs, afterwards I could almost feel them swelling in my body and causing me to expand. My mind played tricks on me.

This led to some strange eating behaviour. I would find myself tucking into roast lamb for Sunday lunch, but desperately pushing the accompanying potatoes to the edge of my plate, or picking the mushrooms out of a risotto, while leaving the gloopy pile of rice to one side. Breakfast was a particular challenge; with cereal, toast, croissants, muffins and more or less any other food typically associated with the morning meal all out of the picture, few options remained, and Id usually just have four cups of tea and wait for lunch. Ill never forget spending a weekend with two immaculately trim gay friends both self-confessed carbophobes and being offered a choice of a boiled egg (no soldiers!), natural yoghurt or smoked salmon for breakfast. It was a great relief.

Deanne Jade, founder of the National Centre for Eating Disorders, says that carborexia is becoming more common and is similar to the more widely known orthorexia (a compulsion to eat organic or biologically correct food). Both, like anorexia, involve a desire to control food at a time when other areas of life seem difficult to manage, as was the case with me. Both carborexics and orthorexics adopt healthy eating as a proxy for weight loss, she says. Carborexics invest these foods with all kinds of dangers so they represent all that is bad and wrong and then they can justify staying away from them and feeling in control. They go to naturopaths or homeopaths who tell them that theyre wheat- or gluten-intolerant, which they mightnt be necessarily. Its easier to deal with a demon you can control, such as bread, than having to confront real issues, such as family and relationship problems, which often lie behind our feelings towards food.

Female Weight Gain Triggers

Snack time: Eating between meals may help dieters lose weight, but keep it reasonable

Snacking can be a help or a hindrance when it comes to managing your weight.

Reasonable snacking can stave off hunger and prevent overeating at meals. But the problem seems to be in determining what is reasonable.

Americans snack more now than in past decades. A study done at the University of North Carolina at Chapel Hill and published in The Journal of Nutrition compared data about snacking from national health surveys done between 1977 and 2006. During this time, Americans increased the percent of calories from snacking from 18 percent of total calories in 1977 to 24 percent of total calories in 2006. Twenty-four percent of calories from snacking equates to about 600 calories per day.

And what Americans snack on has changed. There has been a huge increase in salty snacks, both the low- and high-fat versions, from 2 percent of total snacking calories in 1977 to just more than 14 percent of total snacking calories in 2006.

Consumption of candy, nuts and seeds and cereals also increased. The amount of snacking on high-fat desserts, like cake, decreased, but snacking on low-fat desserts, like reduced-fat cookies, increased.

Surprisingly, consumption of regular sodas remained about the same, but intake of fruit drinks and sports drinks increased. Consumption of fresh fruit, recommended by most health professionals as part of a healthy snack, decreased. During this time

period, obesity rates have dramatically increased.

Maybe Americans snack so much because food is so widely available and so heavily advertised. According to Mintel Menu Insights, a consumer market research firm, menu items at restaurants classified as a "snack item" have increased by 170 percent since 2007.

McDonald's has a Snack Wrap (a beef patty with condiments wrapped in a tortilla), and KFC has "Snackers," a smaller version of the typical chicken sandwich that comes in several varieties. A McDonald's Grilled Snack Wrap with Ranch dressing has 270 calories, while a KFC Snacker has 210 to 310 calories, depending on the type you choose. These are more like a small meal than a snack, and if you add a sweet beverage (around 150 calories) or a small order of French fries (around 200 calories), you would increase the calories significantly.

Many dietitians recommend keeping snacks in the 100- to 200-calorie range. If you eat snacks that are a lot more than that, it can drive up your overall calories for the day.
